Coffee production is developed while staying within ecological parameters during germination, establishment of new parcels and production of already established parcels.  Seeds are chosen from plants that show new growth, green foliage and good cherry development.  Cherries are chosen in mid January and planted in covered seed beds so humidity is controlled.

Seeds will remain in the beds for 60 days until they sprout. The small sprouts will then be transplanted into our nursery where they will grow for 12 months prior to being planted in parcels.  During those 12 months, parcels will be conditioned with shade control, weed control, and organic nutrients to offer plants optimum conditions for growth and development.

Once the time arrives for seedlings to be planted they are arranged topographically along the curvature of each specific parcel.  At this stage the small coffee plants will remain undisturbed for approximately two to three years during the Establishment Stage. The Productive Stage begins at the moment first blooms are detected up until a notable decline in production is noted, which is approximately 25 years according to our microclimate and plantation management.

During the Productive Stage we continue plantation management procedures such as shade control, weed control, and nutrition.
